Peanut Butter Pancakes

Gluten Free and Dairy Free Pancakes.  Adapted from Sunny Anderson - Food Network

  • 1 cup oat flour can use regular flour
  • 1/2 tsp salt
  • 1 tbsp baking powder
  • 2 tsp cinnamon optional
  • 1 cup coconut milk
  • 1 egg
  • 1/2 cup peanut butter
  • 1 tsp vanilla essence optional
  • 1 TBSP coconut oil or melted butter


  1. Mix oat flour, salt, baking powder, cinnamon in a bowl

  2. In another bowl, crack egg and beat. Add coconut milk, peanut butter, vanilla essence and oil to egg and mix well.  

  3. Add wet mixture to dry mixture. Mix well but don't over stir. Set aside for 5 minutes.

  4. Add oil to a non stick frying pan. Once heated, add a ladle spoonful of mixture to pan. If you don't have a ladle, add 1/4 cup mixture. Cook until you see bubbles/holes on the pancake. Flip and cook about 2 -3 minutes on the next side. Continue doing this until all the mixture is gone. 

  5. Serve pancakes with honey or maple syrup with a side of eggs.
