One of my go-tos for breakfast. If you feel to be adventurous, you can swap out veggies and use different ones.
Kidney Bean Burger
adapted from Fix It Fast - Dinner Ready in 25 Minutes Or Less
- 1 can Kidney Beans rinsed and drained
- 1/2 cup uncooked oats
- 1/4 cup chopped onion
- 1 /2 cup carrots, shredded
- 1/2 cup green sweet pepper chopped
- 1 clove garlic, minced
- 2 TBSP ketchup
- 3/4 tsp salt
In food processor, combine all ingredients. Process on/off pulses until coarsely chopped. DO NOT PUREE
Shape mixture in burgers. Use about 1/4 cup mixture per burger.
Heat a bit of olive oil or butter in a frying pan. Once heated add the burgers. Cook for about 5 minutes per side.
You can then serve according to your liking. Brown mustard is great with these burgers
