One of my go-tos for breakfast. If you feel to be adventurous, you can swap out veggies and use different ones.

Kidney Bean Burger

adapted from Fix It Fast - Dinner Ready in 25 Minutes Or Less

Course Breakfast

Ingredients

  • 1 can Kidney Beans rinsed and drained
  • 1/2 cup uncooked oats
  • 1/4 cup chopped onion
  • 1 /2 cup carrots, shredded
  • 1/2 cup green sweet pepper chopped
  • 1 clove garlic, minced
  • 2 TBSP ketchup
  • 3/4 tsp salt

Instructions

  1. In food processor, combine all ingredients. Process on/off pulses until coarsely chopped. DO NOT PUREE

  2. Shape mixture in burgers. Use about 1/4 cup mixture per burger.

  3. Heat a bit of olive oil or butter in a frying pan. Once heated add the burgers. Cook for about 5 minutes per side.

  4. You can then serve according to your liking. Brown mustard is great with these burgers
