I found a recipe on Youtube but after mixing, the mixture was a bit watery so I tweaked the recipe by adding brown rice flour and linseed to bulk up a bit. Otherwise the base recipe was pretty good.

Banana Oat Protein Pancakes

  • 1 cup jumbo oats, ground
  • 1 egg
  • 1 small banana or half large banana
  • 1 tbsp vanilla essence
  • 2/3 cup brown rice flour can add additional ground oats if rice flour isn't available
  • 1 tbsp cinnamon
  • 2 scoops vanilla whey protein protein powder
  • 1 cup water
  • 1 tbsp ground linseed


  1. Mix protein powder in water. You can use 1 cup milk or a nut milk as a substitute. Add mixture to a bowl. Add the remaining ingredients.

  2. Using a hand held mixer, mix all ingredients. If banana is still solid, mash with a fork.

  3. Heat coconut oil in a small non stick frying pan. Just enough to coat the frying pan. Scoop out 1/3 cup of mixture and cook. Once bubbles/holes appear on the surface, flip pancake and cook for about 2 minutes. Continue this until mixture is gone.

  4. Serve with egg or other sides.
